Ingredients

2 medium potatoes , sliced
1 tablespoon olive oil
1 medium courgette , sliced
4 eggs
A handful of mint leaves, roughly chopped
100g cheddar cheese

Method

1, Boil the potatoes for six minutes or until just cooked , then drain and set aside.

2, Heat the oil in large , deep , ovenproof frying pan and fry the courgette slices for four to six minutes until golden . Tip in the potatoes and fry for one minute with the courgettes.

3, In a bowl , beat together the eggs and mint , then season.

4, Pour into the frying pan and stir briefly. Cook for five minutes over low heat.

5, Crumble the cheese over and finish under a hot grill for five minutes , until the eggs are just set and the cheese is browned. Cut into wedges and serve.
